Tonight’s Dinner and a Little Motivation for the Week

Hi everyone! Tonight I made the most delicious and satisfying dinner, so I had to share!

Lemon-Orange Chicken with Roasted Green Beans and Tom’s Potatoes

I marinated the chicken by squeezing fresh lemon and orange juice into a bowl along with olive oil, salt, pepper, oregano, basil, and rosemary. I placed the chicken and marinade in a ziplock baggie and stored it in the fridge for a little over two hours. Then, I cooked the chicken for about 45 minutes at 425 degrees.

For the green beans, I just tossed a bunch of green beans with olive oil, salt, and pepper and roasted them for about 30 minutes at 425.

Tom’s Roasted Red Potatoes were made by my dad and were probably my favorite part of the meal. I could eat these potatoes like popcorn! They are sooo addicting! I think these red potatoes are a great way to satisfy a craving for french fries without feeling greasy and bloated afterward. Here is the recipe straight out of Tom’s Cookbook: Cut the baby red potatoes in quarters and mix them with salt, pepper, minced onion, bread crumbs, dijon mustard, olive oil, and rosemary. Bake the potatoes for about 45-55 minutes at 425 degrees or until they are crispy and delicious!

Chicken Ingredients:

  • boneless, skinless chicken thighs
  • 1 lemon
  • 1/2 orange
  • olive oil
  • basil
  • rosemary
  • oregano
  • salt and pepper (to taste)

Roasted Green Beans Ingredients:

  • 1 package of green beans
  • a drizzle of olive oil
  • salt and pepper (to taste)

Tom’s Roasted Red Potatoes

  • Baby red potatoes
  • olive oil
  • salt and pepper (to taste)
  • 1 teaspoon minced onions
  • 1 table spoon of Dijon Mustard
  • Italian bread crumbs
  • 1 tablespoon of rosemary

On a different note, I thought I would tell you guys my goals for this week and maybe motivate you to come up with some goals of your own. I’ve been really slacking lately with my gym and yoga schedule, so this week I’m going to do my best to get back on track. My goals are to go to the gym 3 times this week, attend 3 yoga classes, meditate for 10 minutes every morning, drink more water, and do my best to live in the moment.
