Veggie-Packed Sandwich Ideas

One of my favorite ways to include more vegetables in my diet is to make different versions of veggie-packed sandwiches. These usually stay pretty fresh in a cold lunch box or fridge and there are so many possible combinations that I never get bored! Today I decided to pack this:


Hummus, Tomato, Pepper, Goat Cheese & Arugula Sandwich

In order to make sure the sandwich doesn’t fall apart, I like to spread hummus on both pieces of bread. Then, I put the tomato slices on one piece and arugula and goat cheese on the other. I place the peppers on top of the tomatoes, close the sandwich, and then wrap it in tin foil. Keeping the sandwich in the tin foil when eating also makes for a much less messy lunch 🙂 For sandwiches like this, I like to either make my own hummus or buy hummus that is made with very few ingredients (i.e. chickpeas, tahini, some type of oil (preferably olive oil), lemon, garlic). Today I used Whole Food’s store brand hummus.


  • 2 slices of Whole Food’s Seeduction Bread
  • 4 thin slices of orange bell pepper
  • two tomato slices
  • sprinkle of crumbled goat cheese
  • handful of arugula
  • hummus

I also made this sandwich last week, but never got around to posting it so I’ll share it now! It was sooo delicious and very straight forward.


Mozzarella, Tomato, Arugula Sandwich


  • 1 slice of fresh ciabatta bread
  • 1 slice of mozzarella cheese
  • two slices of tomato
  • handful of arugula
