Today was definitely a much needed self-care day 🙂 I caught a cold a few days ago (probably due to traveling and lack of sleep!), so I’ve been taking it easy the past few days. Yesterday, I finally got myself to Whole Foods and restocked the kitchen with nutritious foods, which means I was able to eat super clean today!!
I let myself sleep in this morning and then started my day off with freshly made juice and an awesome quote from The Little Book of Light 🙂

For breakfast I had a veggie omelette and OF COURSE some coffee. I had a hazelnut k-cup this morning, which was very delicious and smelled like fall!
Asparagus, grape tomato & scallion omelette (veggies sautéed in coconut oil; used 2 whole eggs). Hazelnut coffee (black) in my favorite mug.
After breakfast, I finished my book “Being Mortal.” I really really really recommend this book! Especially for people interested in going into medicine. At first I wasn’t a huge fan, but the end of the book is very moving and eye opening. For me one of the most notable takeaways was Dr. Gawande’s discussion about the different ways physicians handle difficult conversations about terminal illness, prognosis, treatment options, and death with patients. I like how he showed that there is a way to honor a patient’s goals and autonomy at the end of life.
Anyway, since I finished “Being Mortal,” I decided it was time to get a new book so I went to the local library.

Decided on this. Another book, also by Atul Gawande. I’ll let you guys know how it goes 🙂
Of course I couldn’t wait, so I made a quick snack and opened up my new book as soon as I got home.
Peppermint tea with a handful of almonds. Got this mug from one of my favorite little coffee shops in the city.
Then it was time for lunch.
Open-faced hummus and veggie sandwich with a side of Greek Salad.
- 1 slice of toasted Whole Foods Seeduction bread
- roasted red pepper hummus
- handful of arugula
- two tomato slices
- 1 slices of red bell pepper
Greek Salad Ingredients:
- heirloom tomatoes (orange)
- green lemon-garlic olives from the one and only Whole Foods
- crumbled feta
- olive oil
- fresh lemon juice
- salt & pepper
- hint of oregano
Pre-dinner snacking (left overs from yesterday).
Ate this instead of the cookie I was eyeing. It’s for the best right?
Dinner was made by my awesome mom! We had roasted chicken with potatoes and grilled corn.

So that was my day! I didn’t eat any processed foods, which I am very proud of. I still kind of want that cookie, but I’m going to resist…at least until tomorrow 🙂 What was your favorite meal today? Post a comment below!
