Tonight I made one of my favorite fall/winter dinners: sautéed veggies with rice. This is one of my go to meals because it’s super easy to make, it’s very filling, and you can change it up by adding different veggies and seasonings 🙂 Tonight I kept it very simple.
Broccoli, red pepper, grape tomato, spinach, brown rice
Ingredients (Serves 2):
- 1 small broccoli bunch
- 1 red bell pepper
- 6 grape tomatoes
- handful of spinach
- brown rice (about 1.5 cups)
- coconut oil to coat the pan
- salt and pepper (to taste)
Sometimes I swap out the brown rice for quinoa or pasta and I’m always changing up the veggies and spices. Basically, I coat the pan with coconut oil and sauté the chopped veggies until they are browned and slightly soft. While the vegetables are cooking, I prepare the brown rice. Once the rice and veggies are done, I stir the brown rice straight into the pan with the veggies so that it absorbs all of the different flavors. I think this really makes a huge difference so I definitely recommend it!
