Autumn Salad with Honey Cinnamon Balsamic Dressing

I never really crave salads in the fall because I’m always looking for something more substantial and hearty. But after coming up with this sweet and savory autumn salad, I may be craving salads all winter 🙂

Salad Ingredients:

  • Arugula
  • 1 carrot (washed, peeled, and shaved)
  • 1 sweet potato (cut up & roasted in olive oil, salt, pepper & cinnamon at 425 degrees)
  • handful of roasted, salted almond pieces from Whole Foods

Dressing:

  • olive oil
  • balsamic
  • honey
  • salt & pepper
  • cinnamon

The next time I make this (which will probably be soon) I will get better measurements for you with the dressing. I kind of just made up what looked and tasted right to me, but I want to come up with a more consistent recipe so stay tuned 🙂 I bet this would taste good with cranberries or apples too!
