Open Faced Egg and Hummus Sandwich

My standard go-to breakfast item is definitely eggs. For me, eggs are the perfect balance of protein and fat, and they’re quick and easy to make. They also mix pretty well with a lot of different veggies, making them super versatile. Today’s breakfast included tomato, yellow bell pepper, and hummus!

When frying my eggs, I typically use butter just because I think it tastes a lot better—and I personally think a little butter is good for the soul 🙂

Whenever I’m extra hungry, adding hummus to my egg sandwich makes it more filling and adds extra flavor!

Ingredients:

  • 3 tomato slices
  • 4-5 thinly sliced yellow bell peppers
  • 1 (or 2) eggs — depends how hungry you are 🙂 Sometimes 2 is a little too filling for me with the hummus.. but not this morning!
  • 1 tablespoon original hummus
  • 1 slice of bread toasted (I used Whole Food’s Campagne Bread)
  • butter (for the skillet)
  • salt, pepper

The final product is on the messier side, but it’s delicious!!! Happy New Years Eve everyone! See you in the new year!
