8 Easy Healthy Lunch Ideas

I’m creating this post to remind myself (and anyone reading this) that eating healthy does not have to be difficult or boring. Even when you’re feeling lazy, there are still ways to put together a nutritious and tasty meal to nourish your body.

Lunch Idea #1: Avocado Veggie Toast

(Multi-grain or Whole Grain Toast, 1 avocado mashed and mixed with olive oil, salt & pepper, arugula, pepper slices)

Lunch Idea #2: Greek Salad Wrap

(Engine 2 Plant-Strong Organic Sprouted Ancient Grains Tortilla, hummus, arugula, grape tomatoes, cucumbers, garlic lemon green olives, feta cheese, olive oil, salt & pepper, oregano, lemon juice)

Lunch Idea #3: Hummus and Veggie Sandwich

(Hummus, tomato, pepper, goat cheese, arugula, whole grain/multi-grain bread)

Lunch Ideas #4-6: Veggie and Cheese Sandwich

(Whole grain/multi-grain toast, brie, bell peppers, balsamic vinegar, olive oil, salt & pepper)

(Mozzarella, Tomato, Arugula, Sourdough Bread)

(White cheddar, pepper, tomato, baby spinach, whole grain/multi-grain bread)

Lunch Idea #7: Sweet Potato and Carrot Salad With Honey Cinnamon Balsamic Dressing

(Arugula, shredded carrot, roasted sweet potato seasoned with olive oil, salt, pepper & cinnamon, roasted salted almond pieces, dressing made with olive oil, balsamic, honey, salt, pepper, cinnamon)

Lunch Idea #8: Snack Platter

(Hummus, pretzels, white cheddar cheese, dried mango slice, bell pepper slices, grape tomatoes)
