Scrambled Egg Sandwich Tower

This morning I opened my fridge and realized it was time to go grocery shopping! Whenever the fridge is bare, I find it really difficult to whip up something healthybut today I decided I was up for the challenge. Although it’s kind of simple, it was delicious and I was able to include whole, real ingredients.

Ingredients:

  • 2 eggs (scrambled)
  • 2 slices of whole grain/multigrain toast (I used Seeduction from Whole Food’s)
  • 2 tomato slices
  • 1 apple cut into slices
  • butter for the skillet
  • salt, pepper

While this is a very basic breakfast made with whatever I had left over in the fridge, I tried to make it look special and exciting by stacking the sandwich and slicing the apples. Eating healthy is so much more fun this way 🙂
