I don’t know if this is breakfast or dessert, but I do know that it’s AMAZINGLY DELICIOUS!! I made this one morning when I was craving pancakes and it totally hit the spot while keeping me full and energized for a few solid hours 🙂 It was also really easy to make because I took a few short cuts when cooking the oats!
- 1/2 cup of rolled oats
- 1 cup of water
- 1 table spoon of natural unsweetened peanut butter
- 1 banana
- chocolate chips
- Place 1/2 cup of rolled oats and 1 cup of water in a medium sized bowl and microwave for 2.5-3 minutes. *Keep an eye on the oats because they tend to rise toward the end and you don’t want them to explode all over the microwave! When you notice the oats starting to rise, just pause the microwave and stir the oats before continuing to cook them.
- Slice a banana while the oats cook and prep the other toppings.
- Once the oats are done, add the banana, pb & chocolate chips and enjoy!
