Sometimes I fall into the trap of thinking that I can only eat healthy if I create some extravagant, complicated, unique dish. Or I can only eat healthy if I have the right combination of foods in my fridge. It’s this all or nothing mentality that can be detrimental to maintaining a healthy lifestyle. And it’s just so silly! I often have to remind myself that tossing whatever fresh veggies I have left in a bowl with some simple dressing is not only healthy but also really delicious! And if I want to throw in that piece of bread or cracker I’ve been eyeing, I just do it! It’s not going to ruin the beautiful salad I put together and its WAY better than eating the entire box of crackers with a pound of cheese! LOL.
Anyway…I made this deconstructed salad on one of those days where I thought it would just be easier and more satisfying to stuff my face with cheese and crackers and call it a day. I’m writing this post to convince you that eating healthy can be just as quick and easy as eating whatever processed food you’re craving and it can even be much more satisfying! Just forget about the whole “all or nothing” idea, fill a bowl with veggies, add a piece of what you were craving, and ENJOY 🙂 Here’s the bowl I created:
- Baby Carrots
- Cucumber Slices
- Campari tomato slices
- Whole Food’s Market Balsamic Dressing
- Olive Oil
- 1 Back to Nature Multigrain Flax Flatbread
