I love veggie sandwiches because they are so versatile and so easy! If I’m REALLY craving carbs, this lunch is much more satisfying than a salad because I get to treat myself with some delicious bread and I still get to enjoy the wonderful colors and flavors of the veggies! Throw some fruit on the side and you have a plate filled with mostly plants 🙂
- 2 slices of whole grain or multi grain bread (I used Whole Food’s Seeduction Bread, but another type of freshly made bread, or Ezekiel bread works too)
- 2 slices of tomato
- 3 cucumber slices
- 3 orange bell pepper slices
- original hummus (try to choose a brand that has the least amount of ingredients)
You can enjoy the sandwich open faced or you can close the sandwich, wrap it in tin foil, and pack it for a lunch on the go!
