This hummus veggie sandwich is one of my favorite things to make for lunch! It’s so easy and VERY versatile. It also works really well as a packed lunch! It is extremely filling. It’s totally satisfying. And the best part is that you can change up the veggies for more variation.
Hummus Veggie Sandwich Ingredients:
- 2 slices Whole Food’s Market Seeduction bread toasted
- 2 table spoons of Hope Hummus
- 1 slice tomato
- 3 slices red bell pepper
- handful of arugula
You can eat the sandwich open-faced or closed. Both ways are delicious! If you’re packing it, I find that closing the sandwich and wrapping it in aluminum foil works best.
Sometimes I like to add avocado or cucumber. Crumbled goat cheese also makes for a fantastic addition! For more hummus veggie sandwich ideas check out the following posts 🙂
