Goat Cheese Egg Sandwich- My Top 3 Recipes

You guys know that I am a huge fan of quick and healthy meals with simple and real ingredients. But I also love versatility. The great thing about this goat cheese egg sandwich is that it has a few different variations to help keep things interesting!  Plus, it’s really easy to make, it has wholesome ingredients, it’s super flavorful, and it’s easily portable if you need breakfast on the go.

In this post, I’m going to give you guys my top 3 goat cheese egg sandwich combos. Hope you enjoy!

1. Goat Cheese, Tomato & Arugula

Ingredients:

  • 1-2 fried eggs (depending on how hungry you are 🙂 )
  • butter or coconut oil (for frying the eggs)
  • handful of arugula
  • 2 slices of tomato
  • 1 tbsp of crumbled goat cheese
  • 1 slice of Whole Food’s pumpernickel rye bread, cut in half and toasted. (Regular pumpernickel or any other type of bread works as well)
  • salt and pepper (to taste)

2. Goat Cheese, Peppers, Tomato & Arugula

Ingredients:

  • 1-2 fried eggs (depending on how hungry you are 🙂 )
  • butter or coconut oil (for frying the eggs)
  • handful of arugula
  • 2 slices of tomato
  • 4 slices of bell pepper
  • 1 tbsp of crumbled goat cheese
  • 1 slice of Whole Food’s pumpernickel rye bread, cut in half and toasted. (Regular pumpernickel or any other type of bread works as well)
  • salt and pepper (to taste)

3. Goat Cheese, Avocado & Tomato

Ingredients:

  • 1-2 fried eggs (depending on how hungry you are 🙂 )
  • butter or coconut oil (for frying the eggs)
  • 1 avocado (mashed, add salt and pepper)
  • 2-3 slices of tomato
  • 1 tbsp of crumbled goat cheese
  • 1 slice of Whole Food’s pumpernickel rye bread, cut in half and toasted. (Regular pumpernickel or any other type of bread works as well)
  • salt and pepper (to taste)
